Washington, D.C. is a city rich with history and tradition a trait that plays out in the city's restaurants, many of which have been open for decades (or in some cases, a century!) Chef Yannick Cam brought nouvelle cuisine to Washington, and with Jean-Louis of the Watergate, has maintained high excitement on the palates of Washington, at least those who are willing to spend what such handiwork costs and who are not offended by small portions but appreciate their arrangement as well as their preparation. Bamiyan's main peculiarity is that full course dinners cost more than they do a la carte. Fish is poached in parchment, but so is chicken, to a unique succulence that turns it into perhaps the best dish on the menu. It has quietly and gradually become a fine restaurant, its cuisine stably settled among those French restaurants just below La Pavillon, Le Lion d'Or and Jean-Louis, keeping company with Jean-Pierre, Le Bagatelle, Dominique's and Rive Gauche on its good days.
